I didn’t have to think twice when I was choosing which one of my recipes to share on the blog as the historical first one. This recipe for a creamy vegan oatmeal is one of those I am profoundly proud of. I tried to take as good pictures of it as possible but trust me – the taste of this delicious oatmeal is far better than it looks!
So, let’s begin, shall we?
I love easy, healthy, quick and delicious recipes and this one fits all of the mentioned categories. You are going to need only few ingredients plus hot water and you can easily adjust the recipe to be refined sugar free by omitting the chocolate.
For 2 portions of oatmeal, you are going to need:
8 tbsp. of oat flakes / or different kind of flakes according to your choosing
½ cup of frozen raspberries
2 ripe bananas
½ cup of your favorite nuts
2 cubes of dark chocolate
2 cups of hot water
Extra tips for the ingredients:
I love to do my own mix of oat flakes which you can put into a yogurt later or use them as a foundation when cooking all sorts of oatmeal. I mix oat flakes with spelt flakes, flax seeds and hemp seeds and store them in a perfectly closed food container so they wouldn’t go bad.
Good quality chocolate will lift this oatmeal to the next level, you shouldn’t use too much though in order not to outshine the other flavors of the meal.
How to cook:
Put the raspberries into a small cooking pot and add half cup of hot water. Cook until it creates a watery raspberry sauce.
At the same time, pour the rest of the hot water into a medium cooking pot and let it boil. When it boils, add the oat flakes and nuts and cook until the flakes absorb the water and create a nice “oatmealy” consistence.
In the meanwhile, put the bananas into two bowls and smash them with a fork. Pour the cooked oatmeal equally into both bowls and mix it all together.
Once you are done, you have a creamy banana oatmeal. Put on the chocolate broken into pieces and pour over the cooked raspberry sauce.
And ta daaa!
You have your creamy vegan oatmeal with banana, raspberries and chocolate. Once you start to eat, it is best to mix everything together again. All of the ingredients go nicely together, and you won’t even know that you are eating healthy! ^^
